I love the idea of stuffing the fish - we haven't tried that yet.

I recently wrote a post about salt available at supermarkets in Spain - 15 different types! Cooking fish in salt is really common here. I linked to your post for an example of how to use "Sal Para Cocinar."

Here is my post on Salt in Spain: http://www.orangepolkadot.com/my_weblog/2009/11/grocery-series-salt-.htmlJennifer @ OrangePolkaDothttp://www.orangepolkadot.comnoreply@blogger.comtag:blogger.com,1999:blog-29738446.post-85566198397447097072008-11-18T19:55:00.000-05:002008-11-18T19:55:00.000-05:00Interesting question - I buy a fish that's de-scal...Interesting question - I buy a fish that's de-scaled and cleaned by the fish monger - I suppose it's not critical to remove the scales. To me, a fish presented at the table would be less appetizing with the scales even if you remove the skin - it's a matter of personal preference.Sabrahttps://www.blogger.com/profile/00328549946090033100noreply@blogger.comtag:blogger.com,1999:blog-29738446.post-73802141988084873712008-11-18T19:51:00.000-05:002008-11-18T19:51:00.000-05:00Do I have to remove the scales? Thanks!Do I have to remove the scales?
Thanks!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-29738446.post-63434738814832083652007-10-29T09:57:00.000-04:002007-10-29T09:57:00.000-04:00Very helpful, thank you!Very helpful, thank you!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-29738446.post-67239853437763887632007-10-26T10:54:00.000-04:002007-10-26T10:54:00.000-04:00Hi Amy:He's being prepared for the oven - I have h...Hi Amy:
He's being prepared for the oven - I have him on a bed of salt but haven't poured salt over him yet - you are right, he'd be covered (except perhaps for the last part of the tail which, if it hangs over, you can clip or leave sticking out.
-S.Sabrahttps://www.blogger.com/profile/00328549946090033100noreply@blogger.comtag:blogger.com,1999:blog-29738446.post-37276713533210103002007-10-26T10:35:00.000-04:002007-10-26T10:35:00.000-04:00At what stage in the process is the fish in your p...At what stage in the process is the fish in your photo (cool shot, by the way)? All you do is add what you want into the cavity and bake. The salt doesn't permeate the fish in any way - you remove the skin so there's no remaining salt when you are done fileting it.Sabrahttps://www.blogger.com/profile/00328549946090033100noreply@blogger.comtag:blogger.com,1999:blog-29738446.post-63591393153424263292007-10-24T19:45:00.000-04:002007-10-24T19:45:00.000-04:00My husband adores whole fish more than anything. Do you just slit the fish along the skeleton to put in the spices and leave it with the bones in? Are you sure it won't make the fish salty?Anonymousnoreply@blogger.com
